Chicken Pinwheels

4-5 large burrito shells

8 oz cream cheese, softened

1 1/2 tablespoon Ranch mix

1 c cheddar cheese, shredded

1-2 tablespoon milk

3/4 c cooked bacon

1 c cooked chicken (leftover rotisserie chicken works well!)

Mix cream cheese, Ranch, cheddar cheese, milk, bacon, and chicken.

Spread 1/4 c of mix per large tortilla.

Roll gently yet tightly.

Refrigerate for about 30 minutes to firm up cream cheese.  

Cut off ends of tortilla and cut remaining into 1-inch slices

Lots of variations to this one.  Swap the chicken for turkey or sausage; add chopped spinach, diced sun-dried tomatos, chopped black olives, and/or extra seasonings that you just love.  Or maybe try flavored tortillas.  You are limited only by your imagination and taste buds!!
