15 oz can black beans, rinsed and drained
11 oz can shoe peg corn, drained
1 avocado, peeled and chopped
1 bell pepper, chopped
1 bunch of green onions, chopped
2 garlic cloves (chopped) – OR 2 teaspoons pre-minced garlic in a jar
2 can Ro-Tel, drained (hot or mild)
1/3 c chopped cilantro
1/4 c lime juice
2 T olive oil
1 tsp salt
2 tsps ground cumin
Mix and let sit covered in fridge for at least 24 hours for best flavor.
Serve with tortilla chips.
