I honestly have no idea where this recipe came from. When you look at the ingredients, you will be thinking, “?!” but Jim and I really, really like this dish. It’s a cross between a chili and a soup. Makes for a great comfort food on a wintry day!

What you will need:
Large pot
1 pound hamburger meat
2 cans Ro-Tel (original or hot – your choice)
2 cans kidney beans
2 cans Ranch Style beans
2 cans minestrone soup (I always use Campbell’s)
1 pound Velveeta cheese (half of one of the blocks)
Frito’s
Brown the meat in the large pan and drain the grease. Add the two cans each of the next four ingredients. (Hence the name, “2 x 4”!) Heat thoroughly. Cut up the Velveeta while the mixture is heating and then add to pan. Stir and heat until the cheese is melted.
Serve with Frito’s and pop of your choice. With our family it is always Dr. Pepper! If Jesse is coming to eat with you, he would prefer it if you would put the Ro-Tel in the blender first. He doesn’t like those chunky tomatoes.
