Caribbean Bowls

Vinaigrette

1 T orange juice

1 T olive oil

1 T white wine vinegar

1 T lime juice

1 T honey

1/8 tsp salt

1/4 tsp pepper

Combine all ingredients well.

Rice

1 c uncooked rice

1 c water

1/2 tsp jamaican jerk seasoning

1/2 tsp salt

1 can black beans, drained

Cook rice according to directions with seasoning and salt.  When rice is done, add black beans and heat through.

 

Pork

1 pound pork, chopped

2 tsp oil

1/4 tsp salt

1/4 tsp pepper

1/2 tsp jamaican jerk seasoning

Cook pork in oil and seasonings in non-stick skillet for about 10 minutes.

Pork can be easily substituted with chicken.

Veggies/Toppings

1 c pineapple, chopped

1/2 c purple onion, chopped

1/2 fresh jalapeno, chopped

Avocado, peeled and shopped

Fresh cilantro, chopped

Spoon rice into bowl.  Add meat and veggies.  Pour vinaigrette over top.  Add avocado and cilantro.
