1 T olive oil
1 lb smoked sausage, diced
1/2 cup onions, diced
2 cloves minced garlic
1 c low sodium chicken broth
1 can Ro-Tel
1/2 c heavy cream
8 oz penne pasta
salt and pepper
1 c. monterey jack cheese
1/2 c scallions, thinly sliced (Jesse, you can omit these!)
1. Cook sausage and onion in oil. Add garlic and cook for about 30 seconds.
2. Add broth, tomatoes, cream, pasta, salt and pepper. Bring to a boil, cover, reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
3. Remove skillet from heat and stir in 1/2 c of cheese. Top with remaining cheese and scallions and cover to let cheese melte
