Potato Soup

O.K, Jesse.  Here you go.

Brown 4-5 pieces of bacon (Petit Jean Peppered Bacon is by far the best!!)

While the bacon is cooking, peel and dice 4-5 medium potatoes.  (And 1/2 onion if you want)

Remove the cooked bacon and pour the diced potatoes into the grease.  Brown the potatoes for a few minutes.  Then cover with water (or chicken broth), add 1 tsp salt and cook for 20-30 minutes (depending on how finely you chopped the potatoes.)

While the potatoes are cooking, stir 3 tbsp corn starch into 1 cup of heavy cream. When the potatoes are “forkable”, add the corn starch to the potatoes.  Stir it up and let it cook for 5 or so minutes to let it thicken.  If desired, add chunks of Petit Jean peppered ham and shredded cheddar cheese.
