Salsa-fied Chicken

Came across this recipe just in the recent years.  Found out we love it!!  It is pretty easy and can be varied a lot.  Wish we could have had this while the kids were little, during their picky eating years!  Very easy and very quick.

      • What you will need:
      • Large pot
      • 1 tablespoon oil (Canola or whatever)
      • 1/4 tsp salt, 1/4 tsp pepper
      • 1 pkg taco seasoning
      • 1 pound boneless, skinless chicken breasts, cubed but not cooked
      • 1 can chicken broth
      • 8 oz jar of salsa, your favorite (I like On The Border – medium)
      • 2 cups instant rice
        8 oz shredded cheddar cheese
 
      • Heat the oil in the large pan. Add salt, pepper, seasoning and chicken and cook thoroughly over medium-high heat. Only takes about 5 minutes. Stir frequently.
      • Add broth and salsa; bring to a boil.
      • Turn off heat, add rice and stir. Sprinkle with cheese and cover.
      • Let sit 5 minutes until the rice is cooked. Stir before serving.
We serve this with refried beans and Dr. Pepper. If you have leftovers, use it as a burrito filling and add your favorite toppings! Optional Add-ins:
  • corn
  • black beans
  • black olives
  • green onions
  • sour cream
