Sort of made this recipe up during the 2020 Covid Isolation. Had some stuff on hand and just put it all together. It worked!
- 2 chicken breast, boneless, skinless, chopped pretty small
- 1 T tapatio
- 1 T oil
- 1 tsp italian seasoning and any seasonings you want to add: salt, pepper, red pepper, cayenne, oregano, basil, etc.
Cook chicken in above ingredients until no longer pink. Add one jar of marina sauce. I used Pioneer Woman Marinara but whatever is your fave.
While cooking chicken, also cook orzo, about 1/2 box or so. Drain when done and drizzle some EVOO so it won’t stick.
Put together in individual bowls, orzo then chicken sauce on top. Generously sprinkle with mozzerella cheese.
Pairs well with a ceasar salad, some garlic bread and a red blend.
