Mandarin Orange Salad

This is a great cool salad for a summer day!

Ingredients:

1 head iceberg lettuce, chopped
1 stalk romaine lettuce, chopped
5 stalks celery, chopped
5 green onions, chopped
2 large can of mandaring oranges, drained

1  cup sliced almonds
5 tablespoons plus 1 teaspoon sugar (Not sure why that weird measurement?!)

1 c vegetable oil
1 c red wine vinegar
1/2 c sugar
2 teaspoons salt
4 tablespoons fresh parsley, chopped (OR 2 tablespoons dried parsley)
4 dashed Tabasco sauce
dash of pepper

Instructions:

1. Put sugar in teflon skillet.  Melt on high temperature.  It turns clear and happens pretty quickly.  Burns easily so stay on top of that part.  When the sugar has tunred clear, remove from heat and quick stir in the sliced almonds.  Cool immediately on wax paper.  When it has cooled, crumple it up.
2. Combine first five ingredients in a large bowl.
3. Mix last seven ingredients in a container.  Add to salad 30 minutes before serving and stir well.  Also stir in the sugared almonds.
